      Hi everyone, I recently started baking more and noticed that recipes sometimes mention different types of cinnamon, like Ceylon and Saigon. I’ve only ever used the regular kind from the grocery store, but now I’m curious—does the type of cinnamon really make a difference in flavor? If you’ve tried both, which one do you prefer for baking or cooking?

Ceylon, often called “true cinnamon,” has a lighter, sweeter taste, which works well for delicate desserts like custards or rice pudding. On the other hand, Saigon cinnamon has a stronger, spicier kick, making it perfect for bold recipes like spiced cookies or savory dishes.
